Recipe: Garlic Butter Oyster Mushrooms

Introduction

Sometimes, the simplest recipes are the most delicious. These garlic butter oyster mushrooms are sautéed until golden and tender, then finished with fresh herbs. They’re rich, aromatic, and perfect as a side dish, toast topping, or even a quick snack.

Ingredients

  • 2 tbsp butter – or plant-based alternative

  • 250g (about 1/2lb) fresh oyster mushrooms – cleaned and torn into pieces

  • 3 cloves garlic – minced

  • 1 tbsp olive oil – prevents butter from burning

  • Salt & black pepper – to taste

  • Fresh parsley or dill – chopped, for garnish

Instructions

  1. Sweat the mushrooms – Add your chopped mushrooms to a dry pan or skillet on medium heat and let the mushrooms sweat out their excess moisture.

  2. Add oil/butter – Add the butter to the sweated mushrooms and allow them to soak back up most of the fat. Keep them on a medium-high heat until the outside is a nice crispy golden color.

  3. Add garlic – Stir in garlic with olive oil and cook for another 1–2 minutes until fragrant.

  4. Season & serve – Sprinkle with salt, pepper, and parsley. Serve hot.

Tips & Variations

  • Add a pinch of chili flakes for heat.

  • Splash in lemon juice for brightness.

  • Serve over mashed potatoes, pasta, or crusty bread.
